I like to mix and match with this recipe. In addition to sweet potatoes, you can cook broccoli, cauliflower, zucchini, red potatoes, and carrots following the same technique! Just make sure you adjust the cooking times accordingly. Zucchini, for example, would take half the time to cook.

Ingredients
- 2 salmon fillets 6 ounces each
- 2 medium sweet potatoes peeled and diced into 1-inch cubes

- 1/2 teaspoon garlic powder
Instructions

Preheat your oven to 400°F. Toss the sweet potatoes with 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and rosemary. Spread them on a baking sheet.

Bake in the preheated oven for 15 minutes until they begin to soften.

While potatoes cook, drizzle the salmon fillets with the remaining 1 tablespoon olive oil and season with salt and black pepper.
