Tomato bread. Toast with tomato. Whatever you call it, it’s SERIOUSLY SIMPLE.
But also, SERIOUSLY DELICIOUS OH MY GOSH.
It’s Spanish food week and we started with cod scrambled eggs and then a Salmorejo recipe.Today I am introducing you to probably the MOST FAVORITE thing that we ate while we were in Spain. We still make this almost weekly because we just FELL SO HARD.
It’s literally better than cookie dough overnight oats or my beloved hard boiled egg snack. You have to try it and, if you’re feeling fancy, put some prosciutto on top .

Today’s pan con tomate has to be the EASIEST tomato recipe around. It uses whole, healthy ingredients and is SO flavorful, comforting and satisfying, that you’ll want to make it over and over again!

In Western culture, when you think of tomatoes and meals that incorporate them, you might think of lunch or dinnertime. However, on our trip to Spain, Mr. FFF and I learned that in other cultures, tomatoes are commonly enjoyed for breakfast, too. Recipes like this pan con tomato one are typically eaten for breakfast and dinner in Spain, especially tapas. - Roma Tomatoes
- Good Quality Extra Virgin Olive Oil
- Unseasoned Rice Vinegar
- Fresh garlic, minced
- Sea Salt
- Thickly sliced bread (gluten free or paleo if needed)
- Cured Ham or Prosciutto

What Bread To Use
The type of bread you use to make this spanish tomato recipe can make or break your experience. All bread options will taste good, but some will just HIT IT OUT OF THE PARK. You want a good, thick bread. It is SO worth it to go for a thicker, specialty bread for the overall experience of this recipe. You could even bake up a homemade loaf or two! Our top 3 favorite types of bread are:
- Pumpernickel Rye
- A crusty baguette
- Thick-sliced sourdough
I’ve also made this with normal whole-wheat toast. You could also use gluten free, low carb or paleo bread. It’s fine and all. BUT, do yourself a favor and get some GOOD bread.
How to make Pan Con Tomate
Grate
Peel the skin off the roma tomatoes. Next, use a box grater to grate the tomatoes into a bowl.
Mix
Add all of the remaining ingredients into the bowl and mix until everything is well combined.
Serve
Spoon some tomato mixture onto a slice of good, thick bread and VOILA- you are ready to eat! DEVOUR!

What to serve with It
This spanish tomato recipe is SO delicious and satisfying, but it’s more like an appetizer or a side dish. I recommend serving it alongside a cold bowl of Salmorejo Soup or with your favorite pasta dish such as instant pot pasta primavera. Pan Con Tomate
Ingredients
- 2 Roma Tomatoes
- 1/2 Tbsp Good quality extra virgin olive oil
- 1 tsp Unseasoned rice vinegar
- 3/4 tsp Fresh garlic, minced
- 1/4 tsp Sea salt
- Good, thick, sliced bread. (GF or paleo if needed)
- Cured ham or Prosciutto (optional)
Instructions

OPTIONAL BUT RECOMMENDED: First peel the skin off the tomato. Then, use a box grater to grate the roma tomatoes and place them into a bowl.

Add in all the remaining ingredients and stir until well mixed.
