- 1 large onion chopped
- 1 red bell pepper chopped
- kosher salt to taste
- 4 cloves garlic minced
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 2 cans black beans (15 ounces each) rinsed and drained
- 4 cups low-sodium vegetable broth
- freshly ground black pepper, to taste
- 5 corn tortillas cut into 2-inch long strips
- 1/4 cup fresh cilantro chopped, divided
- Fresh lime juice to taste
- Diced avocado optional garnish
Instructions

Combine the peppers (or chili powder) with the diced tomatoes in a blender and pulse until smooth.

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, red bell pepper, and salt. Sauté for 5-7 minutes until the onion softens and turns translucent.
