Although I enjoy eating salads any time of year, there is something about the arrival of warm weather season that just calls for the cool, crisp bite of fresh fruit. Some of my favorite summer salads contain fruit, especially ripe summer berries. But this peach burrata salad is also pretty high on my list—especially when you catch peaches at that perfect point, when they have fully ripened but haven’t become soft or mushy yet.
Burrata is such a decadent cheese. I first had it in Italy a few years ago when on a trip with my daughter. When you cut it open, and all that creamy goodness oozes out, it’s a feast for your eyes before it becomes a delight for your taste buds. If you serve this salad to guests, you might want to keep the burrata whole so each person can cut it open and experience the visual sensation themselves.
You can also use nectarines instead of peaches to make this salad, or a combination of the two. Feel free to also toss in any berries or nuts that you have on hand, as they are a great addition to the dish. Walnuts are my personal favorite, and candying or roasting them brings out such an incredible flavor that goes beautifully with the creamy burrata, sweet and juicy peaches, and tangy balsamic glaze.

While burrata itself can be stored up to 3 days in the fridge, once it’s combined with other salad ingredients, it’s best to consume it within a day or two. If you do store any leftovers, be sure to put them in an airtight container. Keep in mind that once you add dressing to salad greens, they can become soggy, and cut peaches often turn brown after 24 hours.
Although you can substitute other types of cheese, such as buffalo mozzarella or goat cheese, the flavor will not be the same. Peach Burrata Salad
Ingredients
- 2 1/2 cups mixed salad leaves
- 2 large ripe peaches
- 8 ounces burrata cheese at room temperature
- 4 tablespoons pine nuts
- Balsamic glaze for drizzling
- Fresh basil leaves for garnish
- Optional: crostini for serving
Instructions

Wash the lettuce and peaches in cool water, and then dry them with a kitchen towel.

Pit the peaches and slice them into wedges. Set aside.

Arrange the lettuce on a serving platter. Arrange the peach slices evenly on top of the greens. Tear the burrata into pieces and distribute them evenly over the salad. Sprinkle the pine nuts on top.
