A healthy breakfast has never been more convenient.

They say breakfast is the most important meal of the day. And they’re right! I always make a point of eating something for breakfast. Are Egg Bites With Cottage Cheese Healthy?
Yes, this recipe can be considered a healthy addition to a well-balanced omnivore diet. If you’re looking for low-carb breakfast options, it’ll definitely fit the bill. Not only are these egg bites low in carbs, but they’re also low in calories, gluten-free and packed with protein from the eggs and cottage cheese. Plus, the spinach and peppers add an extra dose of vitamins, minerals and antioxidants, too.
What Is Cottage Cheese?
Is it a solid? Is it a liquid? Well, neither—it’s cottage cheese! This powerhouse ingredient consists of distinct milk curds surrounded by a dressing of cream. Somewhat chunky, somewhat soupy, it’s typically made from pasteurized skim milk and is high in protein. Because of this, it’s long been a beloved ingredient for health-conscious individuals and athletes—and it’s also been having a trendy resurgence lately, as people are (re)discovering its amazing properties.
If you’re new to cottage cheese, it’s time to join the movement. It’s a fantastic ingredient in recipes like this one for egg bites because it adds protein, moisture and bulk without overpowering other flavors. It’s also great on its own as a snack or light meal with a couple of toppings. You can enjoy it much the way you do Greek yogurt: topped with fruit, honey, or granola. It also makes a great base for dips. Basically, consider cottage cheese your versatile BFF in the realm of dairy products.

FAQs & Tips
They’ll keep in an air-tight container in the fridge for up to 5 days, or in the freezer for up to 1 month. Thaw them overnight in the fridge, then enjoy cold or reheat in the microwave for 60 to 90 seconds.
The great thing about these egg bites is that they’re endlessly versatile. You can easily swap the spinach and red pepper for your favorite veggies—or whatever you’ve got in your fridge! Mushrooms, kale, and asparagus, for example, could all be yummy. I also love adding a touch of whatever herb I have on hand for some extra flavor. My personal favorites are dill and parsley. Or you could add a dash of hot paprika or red pepper flakes for a spicy kick.
If you find your egg bites are a bit soggy after removing them from the oven, there are several factors that could be to blame. First, they may be undercooked, so you may want to leave them in the oven for a few extra minutes. It may also be that you’ve added too many vegetables, which contain small amounts of liquid that get released into the bites as they cook. In that case, make sure not to overcrowd your egg bites and stick to the recipe specs rather than eyeing your measurements—which I’m also guilty of from time to time.
