It’s not easy to make potato chips part of a healthy meal, but you can if you get a little creative with how you use them. That’s what I love about this recipe for potato chip chicken; the dish is exactly what it sounds like! All you have to do is coat the chicken with potato chips and spices the same way you would with bread crumbs, and the result is downright delicious.
Why would you ever think to coat chicken with chips? For starters, the chips provide a great crunch to the exterior of the chicken, and if you use the right chips, they won’t lose their classic texture just because they spent time in the oven. You also get a little bit of the salty flavor of the chips with every bite, contrasting against the juicy and tender interior of the chicken.

FAQs & Tips
The chicken breasts for this recipe can be prepared up to 24 hours before they go in the oven. Just cover them tightly with plastic wrap or aluminum foil and store them in the fridge. After cooking, leftovers can also be stored in an airtight container and will remain good in the fridge for 3 or 4 days.
If you want the chicken to come out extra crunchy, you can dip the chicken in the egg mixture and the chips twice to get an extra thick coating.
It’s best to finely crush the potato chips so that they coat the chicken evenly. However, leaving a few larger pieces of chips mixed in can help provide a little more crunch.

Serving Suggestions

Ingredients

Instructions

Preheat oven to 375°F. Season chicken breasts with salt and pepper.

Separately, combine the potato chips, dried parsley, garlic powder, and onion powder.

In a shallow bowl, beat eggs. Dip each chicken breast into the eggs, then coat with crushed potato chips.
