This NYC-inspired Bagel Sandwich is an excellent on-the-go breakfast!

You know when you take a vacation, and it becomes THE vacation? Like everyone who went never stops talking about it, and you try to explain the feeling of being there but it seems impossible, and you long to go back and experience it all over again exactly the same way? For me, that vacation destination was New York City.
If you’ve ever been to New York, you know the enchantment it casts on its tourists. The city is alive with music, art, people, food … ugh, the FOOD! You have not lived until you’ve tried Magnolia Bakery’s famous banana bread pudding or discovered a 24-hour, hole-in-the-wall pizza joint in Brooklyn that serves sourdough crust. New York is famous for quite a lot of things. But at the top of the list, in my opinion, is its incomparable bagel sandwiches.
When I look back on my trip to New York, all I remember eating are these incredible bagel sandwiches right off the subway entrance. I always ordered mine with avocado, turkey bacon, and hot sauce, and I swear I lived off of these things for my entire week-long stay in the city. Ever since I’ve been back, I’ve been craving them and trying to recreate them at home. And with this bagel sandwich recipe, I think I’ve finally got it down.
This dish has all the makings of an iconic breakfast on the go. Egg fried in a little bit of butter or olive oil, a perfectly toasted bagel, melty gooey cheese, all topped with crispy turkey bacon, thick slices of avocado, and your favorite hot sauce (mine is smoked chipotle Tabasco—yum!). Well, now that I’ve got your mouth watering, let’s actually make one of these bad boys.

Ingredients
- 1 plain bagel
- 2 slices of turkey bacon
- 1 tablespoon unsalted butter
- 2 large eggs
- 1 slice of cheddar cheese
- Salt and pepper to taste
- 1/4 avocado sliced

Instructions

Slice the bagel in half and toast it to your desired doneness.

In a skillet, cook the turkey bacon until crispy, then set aside on a paper towel to drain.

In the same skillet, melt butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and fry to your liking.

Place the slice of cheddar cheese on one egg while still in the skillet to melt slightly. Layer the cooked bacon, plain egg and avocado slices on the bottom half of the toasted bagel.
