Colorful, healthy Corn Salsa, made with fresh corn, peppers, and zesty lime, is the perfect game-day snack, dinner side dish, or light lunch.

While traditional tomato salsa is known to date back to ancient civilizations in Central America, there is no specific history of our fresh corn salsa recipe. However, we can speculate that the dish has links to the Aztecs, Incas, and Mayans, as well. Whoever made it first, thank you, because I love it!
Cut back to current day—we host football every Sunday at my house. For some of us, this means checking our fantasy football score constantly and having some drinks, but for others, it’s about the food. And I am super proud to cook, share, and serve. One non-negotiable is chips and a classic salsa, but this gets boring. I love this pretty, zesty corn salsa, not only because it’s healthy, but also because it’s easy to throw together. Seriously, chop veggies, grab a bowl and throw it together—boom.
Another great thing about this corn salsa is that, well, it’s not like dippy, soupy salsa. Don’t get me wrong, I love dipping Fried Tortilla Chips in traditional tomato salsa or jalapeño salsa. Despite that, today’s bright corn salsa is more than just a dip for chips. It can be enjoyed as a healthy snack or a quick lunch. It’s also the perfect veggie side dish with any meal, any time of day.
Is Corn Salsa Healthy?
It sure is! This corn salsa is nothing but fresh. I love cutting the corn off the cob for this salsa, but you can use canned corn if you’re in a pinch. Either way, corn is high in fiber and contains antioxidants, vitamins, and minerals. Red peppers and jalapeño peppers also contain vitamins A and C, potassium, and lutein. This corn salsa is gluten-free, vegan-friendly, and low in calories.
