Get ready for a blast of flavor that will leave you wanting more!
Come one, come all, to discover my newest dinner obsession: the vibrant, sweet, and spicy Korean noodles dish. Tender dangmyeon, or sweet potato glass noodles, take center stage here, coated in tangy soy sauce, spicy gochujang, and plenty of irresistible yet nutritious sautéed vegetables. This delicious meal has kept me up at night as I lay in bed excitedly thinking about the leftovers. You’re gonna love it!
Spicy Korean noodles are wonderfully easy to prepare in under 30 minutes, giving them a grand spot in your weekday meal rotation. I love the flavor profile of spicy Korean noodles, but gochujang stands out as my favorite ingredient—I’m a big fan of spice. The heat transforms the dish, leaving a pleasant lingering taste in my mouth every time. If you’ve been looking for something new to whip up in your kitchen, try this recipe next.
Are Korean Noodles Healthy?
The healthiness of spicy Korean noodles depends on several factors, the most important being your own dietary needs and preferences. With a moderate amount of carbs and sodium, these noodles may not be a suitable dinner option for anyone on a low-carb diet or monitoring their heart health.
However, spicy Korean noodles are a great source of potassium, vitamin A, and vitamin C. And garlic, carrots, bell peppers, onions, and spinach are all powerhouse veggies that support a well-rounded diet.
Where can i find ingredients such as dangmyeon and gochujang?
If your typical grocery store doesn’t stock Korean food products like dangmyeon or gochujang, don’t fret! In my experience, there’s usually a local Asian market with everything you need. A popular Asian grocery chain is H Mart, but if you do not have one in your area, I’m sure there is a nice local spot you can shop at. Plus, supporting local businesses is always best! However, if your town is more of a food desert, where ingredients can be hard to find, I suggest seeing if any online stores will deliver dangmyeon or gochujang to your address.

FAQs & Tips
Korean noodles can easily be made ahead of time. Once your dish cools slightly, store it in one airtight container (or multiple small ones) in your fridge for up to 5 days. Korean noodles can be enjoyed cold if you don’t have access to a kitchen at work or reheated in the microwave or stove.
Spicy Korean noodles are a well-rounded vegetarian dish for any meal. However, if you eat meat, you can easily add some beef, chicken breast, or shrimp to your pan while cooking. For vegetarian protein add-on ideas, I suggest a crispy tofu, edamame, or maybe even some smashed chickpeas.
I am all about the sauce, and therefore, a big believer that it is the most important part of a dish. So please don’t go light on the sauce with Korean noodles! It adds immense flavor and truly takes your dish to the next level.
Serving Suggestions
Spicy Korean noodles are a delicious and fulfilling meal alone, but that doesn’t mean we can’t add to it or pair it with a couple of sides! As I mentioned above in the FAQs, you can increase the protein content easily by adding some slices of beef, chicken breast, shrimp, or a vegetarian-friendly protein source like crispy tofu or edamame. A few fun sides I recommend are a refreshing cucumber salad, shrimp spring rolls, or a bowl of soy sauce eggs. Enjoy!
