Is Keto Coleslaw Healthy?
This recipe is low-carb and high-fat, both essential aspects of the keto diet. It’s also high in vitamin C, which supports the immune system. It’s easy to make a non-keto version by substituting in sugar instead of the erythritol or monk fruit. Most folks don’t stay on a keto diet indefinitely, just until they reach their intended goal. What is monk fruit?
Monk fruit is about the size of a lemon and has a fruity taste, which sometimes leaves an aftertaste that some people don’t care for. The fruit is native to southern China, and has been difficult to mass produce in other locales, so sometimes it’s difficult to find. Monk fruit extract is 300 times sweeter than table sugar. And the sugar is metabolized differently than the sugar we’re used to, so it doesn’t affect blood sugar. It comes in liquid, granulated, and powdered forms. Sometimes monk fruit sweeteners include erythritol or other sweeteners such as dextrose.
There’s always an allergy risk, with any food. Monk fruit is a member of the gourd family, so anyone allergic to other gourds might also be allergic to it. Other gourds include melons, pumpkin, squash, and cucumbers.

Keto coleslaw needs to be kept cold due to the mayonnaise. So if you plan to transport it, a bed of ice is recommended. It keeps well in a sealed container in the refrigerator for 3-4 days. Stir as needed to keep the cabbage moist with dressing. Freezing is not recommended.
Erythritol is used often for keto-friendly recipes. It doesn’t work quite the same as sugar in our bodies, so it doesn’t affect glucose or insulin levels. It’s a natural sweetener, produced by fermentation of corn sugars, and it’s about 70% as sweet as table sugar. As with many processed foods, it’s not recommended to consume large amounts of it, as it may cause intestinal issues. Research continues, as health concerns associated with consuming erythritol rise.
Celery salt is ground celery seed with salt added. So using celery salt will give you a little bit of celery flavor along with salt—you won’t need to add additional salt. To be mindful of sodium content, realize that the ratio is 2:1. That’s 2 parts salt to 1 part celery seed, to create celery salt.
