Make this easy bite-sized breakfast with your littles, roomies, or sleepover guests.
Would you believe that in just 20 minutes, you can have 8 golden brown baby egg cakes that rival even the classiest cafe menu? While some brunch dishes are challenging to make, this isn’t one of them! In fact, you can have the pleasure of a party every weekday morning. Whether you wake up bright and early before the kids go to school, or bake them the night beforehand and store them in the fridge to grab-and-go, they’re as easy to make as they are to enjoy. No hassle, simple ingredients, and a whole lot of flavor!
I like to make these at the start of a busy work week, so that all my breakfasts (or midday snacks) are taken care of. These golden nuggets are small but mighty, packed with iron, protein, and pure potential. No matter which meats or veggies you add, these fluffy egg bites can sustain your energy and balance blood sugar levels, supporting a productive and prosperous day ahead.
Are Air Fryer Egg Bites Healthy?
As far as a filling but delicious breakfast goes, this is one of the best options. It’s wholesome, hearty, and free of gluten and sugar. Not only is it full of protein from the eggs and iron from the spinach, but it can be added to with some of the greatest superfoods out there. For example, I like to “frost” my egg bites with Homemade Chipotle Guacamole, bringing in more fiber and good fats from avocado as well as a creamy kick of spice.
For a flavorful boost of extra protein, you can also replace milk with Greek yogurt, which will turn your bites into the fluffiest little fellas. And, if needed, you can swap the dairy with unsweetened oat milk and Miyoko’s brand plant-based cheese. Since it’s so simple, you can adjust accordingly with ease.
Why the Air Fryer is Ace!
Other than the obvious ease and speed of cooking, the air fryer also offers a low-fat and low-risk way to cook almost anything. Whether you’re roasting veggies, meat, or little egg bites, an air fryer is one of the best investments you could make for your kitchen. Plus, they’re known to last a while; generally guaranteed to work in perfect shape for up to 3 years. Of course, proper cleaning and care ensures that it lasts even longer. Make sure to let the machine cool down between batches of whatever you’re making, and wipe down the inside between each use with a paper towel or rag.

FAQs & Tips
You can store these in a refrigerated container for up to 6 days, although I have left them in the fridge for a week. You can also cover them in plastic wrap and keep them in the freezer for up to 1 month. Make sure to thaw in the fridge before reheating in the air fryer (or oven at 350 degrees F for 10 minutes). As I said, these golden brown nuggets are easy to make at the start of the week to enjoy throughout!
Be careful to keep an eye on the egg bites and don’t air fry them for longer than the recipe recommends. Otherwise, they might turn rubbery and dense, which is the opposite of the cloud-like balls of sunshine we’re looking for.
For a sweet version of this brilliant brunch, consider mixing 1 to 2 ripe mashed bananas in with the egg. Replace spinach with mixed berries, exchange cheese for Greek yogurt or cottage cheese, and you have yourself a decadent dish that complements crispy bacon or home fries.
Serving Suggestions
