Taking coleslaw to a whole new level with an amazing collection of flavors!
As a side dish or something that you bring to a potluck, you can’t go wrong with coleslaw. But if you’re a big coleslaw fan like me, sometimes you want to do something special. This recipe for Asian ramen slaw is definitely something special. The recipe may seem basic because it calls for coleslaw mix and store-bought ramen noodles. That’s part of what makes this a recipe you can whip up in about 10 minutes. However, Asian ramen slaw is so much more than that.
Making this coleslaw only requires mixing dry ingredients with the dressing. But that simple act creates a confluence of flavors. That includes ingredients like slivered almonds and sunflower seeds that you probably won’t find in other coleslaw recipes. It also includes flavors from the sesame oil and soy sauce from the dressing. When everything is combined, you get that sweet, tangy taste that you’re accustomed to getting from coleslaw, as well as the texture and crunch of the vegetables and uncooked noodles. What could be better?

- 2 packages (3 ounces each) ramen noodles, flavor packets discarded and noodles crumbled

- 1/2 cup sunflower seeds
- 1/4 cup green onions, thinly sliced
- 1/3 cup vegetable oil
- 1/4 cup granulated sugar
- 1/3 cup apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
INSTRUCTIONS
Combine
Mix coleslaw, ramen, almonds, seeds, and onions.
Dress
Whisk oil, sugar, vinegar, soy sauce, and sesame oil.
Toss & Serve
Combine dressing with slaw mix; serve chilled or immediately.

Serving Suggestions
If Asian ramen slaw is just a side dish, it only makes sense to have an Asian dish as the main course. One dish I recommend is a slow cooker paleo Korean beef stew. Another one of my favorites is paleo orange beef stir fry. You can also keep things relatively simple with shrimp tempura or firecracker shrimp. Ingredients
- 1 package 16 ounces coleslaw mix
- 2 packages 3 ounces each ramen noodles, flavor packets discarded and noodles crumbled
- 1 cup slivered almonds toasted
- 1/2 cup sunflower seeds
- 1/4 cup green onions thinly sliced
- 1/3 cup vegetable oil
- 1/4 cup granulated sugar
- 1/3 cup apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
Instructions

In a large bowl, combine the coleslaw mix, crumbled ramen noodles, toasted almonds, sunflower seeds, and green onions.

In a separate small bowl, whisk together the vegetable oil, sugar, apple cider vinegar, soy sauce, and sesame oil until the sugar is dissolved and the mixture is well blended.

Pour the dressing over the coleslaw mixture and toss well to coat evenly. Serve immediately or chill in the refrigerator for about an hour to allow flavors to meld.
