This simple recipe requires only browned ground beef, dry onion soup mix, elbow macaroni, mixed veggies, and a few other ingredients you likely keep in stock at home. It’s hearty and healthy, and the flavor of the dry onion soup and tomatoes is delicious.

- 1 pound lean ground beef
- 1 package dry onion soup mix
- 4 cups low-sodium beef broth
- 1 can (28 ounces) no-salt-added diced tomatoes, with juice
- 1 package (12 ounces) frozen mixed vegetables
- 1 cup whole wheat elbow macaroni
INSTRUCTIONS
Brown
Cook beef until browned.
Boil
Add soup mix, broth, and tomatoes; bring to boil.
Simmer
Mix in vegetables and macaroni; simmer until tender.

- 1 cup whole wheat elbow macaroni
Instructions

Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.

Stir in the dry onion soup mix, beef broth, and diced tomatoes with their juice. Bring the mixture to a boil.
