I recommend buying low-sodium chickpeas in a BPA-free can when using their liquid.

If roasting peppers at home, you can make those a day or two ahead of time. The hummus can be prepared ahead of time because it remains fresh in the refrigerator for up to 7 days in an airtight container. You can freeze it for up to 3 months in a freezer-safe container. I recommend freezing hummus in ice cube trays and placing the frozen cubes in a zipper freezer bag for individual snack portions. Thaw frozen hummus in the fridge before use.
Because you are only using a drizzle of olive oil over the top, it is best to use high-quality extra virgin olive oil. I recommend olive oils from Greece, Italy, or Spain. I keep a small bottle of imported olive oil for this purpose. It’s not for cooking, only for the finishing touches of special dishes. The taste makes a tremendous difference.
Toasted pita bread, crackers, bagel chips, and vegetables are all good for dipping. Gluten-free crackers or toasted bread are good to have on hand when putting out regular wheat bread or crackers.
