I am a mashed potato girl all the way. My Aunt Tiff makes the best I have ever tried in my entire life. They are creamy and smooth, yet have a few chunks in them and are seasoned just right. Potatoes remind me of the holidays and are definitely a comfort food for me. I love to have them on cold, cozy days in, and I usually only eat them for dinner (occasionally for breakfast) but for the most part, I love to pair potatoes with a roasted or grilled meat or veggie. These stewed potatoes are great because they fit the bill, for me at least. Are Stewed Potatoes Healthy?
You can of course create a vegan version of stewed potatoes by using vegan butter, making them dairy-free, but overall, with just a few clean ingredients used to season the potatoes like salt and pepper, this recipe is pretty simple and fairly healthy. It is free from preservatives and additives but if you prefer to pass on the butter you can use olive oil and a splash of coconut cream. I will admit I did not grow up in a house that used much butter for cooking, it was mainly olive oil, but with that said, there is no need to be scared of butter. A little here and there won’t hurt you.

The main difference is that you add cream or milk to your mashed potatoes, whereas all you add to your stewed potatoes is butter. Also, stewed potatoes are not mashed, but rather have a flakey tenderized exterior with a solid inside. The diced potatoes keep their shape in the stewed recipe, whereas the mashed potatoes get hammered and beaten down, resulting in a more smooth and creamy texture. And since the stewed potatoes keep their shape, you can taste more of the potato base with each bite, so it really just depends on what you are aiming for.
