The excitement for its taste and ease of preparation is a real thing. It’s Peach Bread.

It’s a quick, one-bowl deal. I just love making dishes that are simple and require little to no cleanup. Mainly because I am such a neat freak in the kitchen and feel the need to clean as I go. This moist and peachy goodness is created in one swift go. It’s as straightforward as it gets for bread, discounting yeast and other ingredients that take more time and effort to prepare. Think banana bread but with peaches. Sign me up! It also makes for a great gift for friends, co-workers and neighbors due to its shape and size. Firm enough to wrap minus the worry of frosting. This bread is a real delight.
Is Peach Bread Healthy?
There are a few ingredients you can swap out for a more health-conscious alternative. Replace the granulated sugar with coconut sugar and vegetable oil with coconut oil. You can also pass on the egg, and use a chia or flax seed egg. I suggest you try the chia egg though, chia seeds are wonderful for baking and are such a great superfood, high in omega-3 fatty acids and fiber.
Top with cinnamon and nutmeg for added nutrients and flavor. Cinnamon, one of my most beloved seasonings has anti-inflammatory properties and is known to help regulate blood sugar. Its twin, nutmeg, is great for soothing your stomach, stress relief, and it helps with insomnia. Whole wheat flour is also an option for a healthier alternative to white, bleached flour. I love baking and cooking with almond flour and oftentimes make my own from scratch with the leftover almond pulp I have from my weekly rounds of nut milk.
Convert into an Oh-so-sweet dessert
If you prefer a sweeter bite, I recommend you transform this recipe into a mixed fruit dessert. Dicing up strawberries, raspberries, blueberries, pears and so on. Keep it going with other seasonal fruits. And you don’t have to stop there, you can add candied nuts to this bread along with other ingredients that aid in a sugary taste. I am a huge Trader Joe’s fan and love their toasted and salted pecan halves. They are great for salads, eating as is or baking with.
How about an easy fruit compote? To create a peach or berry compote to top your bread with, simply simmer your diced peaches with a tablespoon of sugar and water then let cook before pouring over your sweet bread. Want more? Create a tasty crumb topping with 3 simple ingredients; coconut oil, almond flour and coconut sugar. No bread pan? No worries! Use muffin trays instead.

FAQs & Tips
To prep this recipe in advance, cut your peaches into small cubes (if using frozen peaches, allow them to thaw completely and for canned peaches, drain first). Then mix all the ingredients together in one bowl to create the batter. Store the bread batter in an airtight container and refrigerate until ready to bake. You can pre-line your baking pan with parchment paper as well to make for an easy cleanup.
Once cooked, wrap the bread in beeswax wrap and leave it out for up to 3-4 days. For longer storage, place the bread in a freezer-safe container and freeze for up to 6 months.
Okay, but not preferred. However, if you try and eat with the seasons like me, then naturally, the main character here (peaches) will not be in season all year long. In that case, canned will do but if you can incorporate some other type of fresh fruit please do.
This recipe calls for 1.5 cups of diced peaches but you can also dice your peaches into larger chunks that make for one full cup. This will help avoid a soggy bread as the juices leak out. Also, make sure to use slightly firmer peaches to avoid a runny batter.
Serving Suggestions
Serve alongside a hot cup of matcha or with a dollop of whipped butter. It tastes wonderful lightly toasted and warmed. Was it a melt-in-your-mouth type of bread?! I hope so.
