Sometimes the best Hot Wings are the ones you make at home.

In October 1964, a place in Buffalo, New York, called Anchor Bar made a special treat for some of its loyal customers. The treat merely involved dipping chicken into a concoction of spices and then dipping them in blue cheese dressing. With that, Buffalo chicken wings began their rise to fame. Since then, they’ve been a hot commodity at every sports bar and pizza pub in America. Even upscale restaurants and fast-food chains have tried to join the chicken wing industry. But what if you could make chicken wings at home?
If you like to cook with chicken, it only takes a few spices and some hot sauce to make your own hot wings. It’s not as hard or complicated as you might think. In fact, you might actually find that the hot wings you make yourself are better than any you’ll be served in a restaurant.
If you end up liking this recipe, there are others you should try. For instance, it can be just as easy to make air fryer Buffalo wings. Actually, there are several varieties of wings you can make in an air fryer, including air fryer lemon pepper chicken wings. To mix things up, we recommend Asian baked chicken wings. For anyone with dietary restrictions, there are even BBQ paleo wings in a slow cooker. The hardest part might be picking out the wings you like the best.
Are Hot Wings Healthy?
While tasty, these hot wings may not align with everyone’s diets. On the bright side, since you are baking these wings rather than frying them, you avoid some of the grease that can make some wings unhealthy. Chicken can also be a good source of protein; however, given the amount of cornstarch, flour, and hot sauce in this recipe, the calorie count might be too high for some people. But unless you’re on a low-fat or low-calorie diet, these hot wings can be enjoyed in moderation.
Make Sure You Marinate
While this recipe can be put together in a relatively short period of time, it’s always better to be patient with wings. If you can, allow the wings to marinate in the mixture of spices for at least two hours, overnight if possible. Also, take the wings out of the fridge after marinating for at least a half-hour before cooking so they approach room temperature. Allow at least five minutes between covering the wings with the spices and putting them in the oven. Obviously, make sure that every wing is fully coated before cooking to help maximize the flavor in each bite.

FAQs & Tips
As mentioned, it’s best to marinate the wings ahead of time. If there are leftovers, make sure they’re stored in the fridge inside a covered container. They should last for up to four days. You can also flash-freeze the wings then store them in the freezer for up to three months. Thaw them out in the fridge overnight.
Tossing the wings in a mixture of salt and baking powder right before baking is often considered the secret to crispy wings.
You can increase the amount of hot sauce in the recipe or add some extra cayenne to the spice mixture.

Serving Suggestions
What goes well with hot wings? There may not be a wrong answer to this. Assuming the wings are the main course, consider a traditional macaroni salad as a side dish. Likewise, a creamy potato salad or perhaps a loaded potato salad will work well too. You can also try homemade onion rings, apple coleslaw, or healthy cornbread protein bars. Finally, don’t be afraid to include a vegetable with the meal, in which case we recommend cumin-roasted carrots or a big helping of oven-roasted vegetables.
