These Jalapeno Deviled Eggs add a little extra “devil” to make a smooth, crunchy and spicy start to your next barbecue or gathering.

The first deviled eggs were made in England about 150 years ago, and were so called because of the use of a little spicy zing in the yolk mixture. They have somewhat fallen out of favor in the UK, but they quickly became a popular staple in North America and have remained one ever since. There are new variations popping up all the time, and I think it’d be fun to make a variety of styles to pass around as appetizers.
Their popularity is understandable – they are inexpensive and easy to make, they look impressive and are, of course, totally delicious.
This version adds a little Texas to a traditional deviled egg recipe, using both fresh jalapeños and pickled jalapeño brine to get that “devil” into the eggs.
Are Jalapeño Deviled Eggs Healthy?
For years we were cautioned about eating too many eggs because they contain cholesterol. It has since been demonstrated that the moderate consumption of eggs has no effect on blood cholesterol. In fact, eggs contain lots of protein, healthy fats, and many vitamins and minerals, and are generally considered to be a very healthy food, especially when they’re not fried.
INGREDIENTS
- 6 Hard Boiled Eggs peeled
- 1/2 tsp Smoked Paprika
- 1 Tbsp Fresh Jalapenos chopped
- 1 Tbsp Pickled Jalapeno brine
- 3 Tbsp Mayonnaise
- ½ tsp Dill
- 1 Tbsp Lemon Juice
- 2 Tbsp Cilantro chopped
- 1 tsp Mustard
- Salt and Pepper
- ½ Jalapeno sliced
INSTRUCTIONS
Slice
Use a sharp knife to slice the eggs in half lengthways.
Mash
Use a teaspoon to gently remove the yolk and place it into a bowl. Then arrange the egg whites on your serving plate. Use a fork to mash the yolks up until they are as smooth as you can get them.
Combine
Add the paprika, chopped jalapeño, jalapeño brine, mayonnaise, dill, lemon juice, chopped cilantro, mustard, and salt and pepper to the bowl with the mashed yolks and mix it until everything is coated.
Fill
Use a teaspoon to dollop in some of the filling into each egg white hollow. It can mound up a little.
Garnish
Decorate with sliced jalapeño and serve.

Tips and Tricks to Make Perfect Jalapeno Deviled Eggs
- To make your eggs easy to peel, transfer the hot cooked eggs into an ice bath and let them cool there for 15 minutes. This will allow the egg white to shrink back from the shell, making them super easy to peel cleanly.
- The heat in jalapeños resides in the white pith and the seeds. If you want to make your eggs less spicy, carefully cut the pith and seeds out of each slice with a paring knife.
- I like the rustic look of these eggs, but if you prefer a fancier presentation you can load your yolk mixture into a piping bag to fill the whites.
FAQs
To get your deviled eggs to taste milder, remove the pith and seeds of each slice of pepper as described above. To turn up the heat, you can add cayenne or hotter peppers to the yolk filling. I still like the jalapeño on top because they have a unique flavor and a lovely fresh crunch.
There are a couple of ways you can do this. One is to use pasture raised eggs which naturally have darker yolks. You can also add 1/4 tsp turmeric powder to your yolk mixture which will really make the color pop.
Try adding a little instant mashed potatoes or a little cornstarch into your yolk mixture. It won’t change the flavor and it’ll thicken up your yolks… especially helpful if you’re piping the mixture in.
Serving Suggestions
I love to pass these particular deviled eggs around at a barbecue, (my husband’s Boneless Pork Ribs are fantastic) and serve them with a cold, crisp beer. It’s also fun to make a variety of types of deviled eggs and have a deviled egg tasting party. Make Ahead and Storage
I recommend assembling these just before serving, but the components can be made a couple of days in advance and be held in the fridge.
Leftovers are fine in the fridge for two to three days, and make a great egg salad when mashed up with a fork and placed between two slices of fresh, grainy bread. Try adding sliced avocado to the sandwich!
