Okay, that might be two steps. BUT STILL.
MAN OH MAN, you guys. These tuna stuffed tomatoes are something else in the best possible way.
You know how your Mom made tuna noodle salad and it always made you very unexcited about dinner time? These tomatoes are NOT THAT.
They are actually good and yummy and will make you think twice about your canned tuna hatred.
We first tried these tomatoes when we went to Spain. They had them EVERYWHERE and, although Mr. FFF hates tuna unless it’s rare tuna like tuna ceviche bowls, we decided to act like locals and try them.
Then, just like pan con tomate, we ordered them almost daily.

Which, liiiike, I never thought I would say that about a tomato. But, here we are.
There’s something about the sweet, tangy balsamic reduction with the punchy flavors of tuna and the freshness of a big, juicy tomato that is pretty much perfect in your mouth.
It’s probably the ideal no-cook simple, satisfying lunch or dinner for the Summer. Or, really, any day that you want to eat something that tastes good AND makes you feel good, but you only got 5 minutes to make the magic HAPPEN.
And, everyone in the world raised their hand like “that’s MEEEEEEE.”
Ingredients for Tuna Stuffed Tomatoes
BECAUSE this recipe is so-stinking simple and uses super simple ingredients, you do really want to make sure you get good quality ingredients for maximum flavor!
Your balsamic vinegar should not be one of those ones that has no sugar and almost zero calories. This will not thicken and will be too tangy and just generally bad. There has never been a better time to INVEST in good quality balsamic vinegar. <–really, you should use good stuff all the time because it REALLY makes you meals so much yummier!
Good quality, lower-mercury tuna, like albacore is also important so your tomato experience is not super fishy and downright bad. If you don’t love the taste of tuna, you could also use tuna packed in oil as it’s a little more mellow!
Finally, good quality olive oil because that little drizzle on top? PACKS these tuna stuffed tomatoes with FLAVOR.
Simple? CHECK. Flavorful? DOUBLE CHECK! Satisfying? OH YES.
Move over tuna salad sandwich because tomatoes are the new kid in town.
Tuna Stuffed Tomatoes Recipe
- 1/2 cup Balsamic Vinegar (good quality)
- 4 large Beefsteak Tomatoes
- 1 teaspoon Sea Salt
- 2 5- ounce cans Tuna drained (Albacore)
- 4 teaspoons Olive Oil (good quality)
- Fresh Basil chopped (for garnish)
To Make the Glaze:
Put the balsamic vinegar in a small saucepan and bring to a boil on high heat.
Once boiling, reduce the heat to medium low and simmer until it has reduced to about 1/2 and coats the back of a spoon, which is about 5-10 minutes.
Transfer to a bowl and set aside to cool (It thickens once cool.)
For the Tomatoes:
Cut a large circle into the tops of the tomatoes and use a small spoon to follow each one out, making sure you don’t through the bottom or sides.
If the tomatoes are wobbly, you can cut the bottoms flat, but make sure you don’t go through the tomato. Sprinkle 1/4 teaspoon of sea salt inside each tomato.
Drizzle 1/2 tablespoon of balsamic vinegar on the inside of each tomato and then pack each tomato with 1/2 can of tuna.
Drizzle each tomato with another 1/2 Tablespoon of vinegar and then 1 teaspoon of olive oil.
Garnish with basil and DEVOUR!
