I have a confession to make: I didn’t try poached eggs until I was an adult. It’s true. I didn’t know, okay! I… didn’t know. My exposure to eggs was limited to scrambled, omelets, and fried. Then I saw poacher cups at the store and I was intrigued. “Poacher” sounds like a bad word. I had no idea how “poaching” an egg was a method of cooking. Prep
Crack the eggs in separate small bowls and set aside. Bring a large pot of water to a boil. Add the vinegar then reduce heat to LOW.
Cook
Stir the water to create a vortex then pour the egg into the middle of the vortex. Slowly simmer the eggs for the time indicated in the chart below then remove the poached egg from the water.
