Pineapple Chia with Cottage Cheese
I usually make chia seed pudding with some type of milk, but one day, I decided to see how the seeds would taste soaked overnight in pineapple juice. Loved it! To make this substantial I topped the pudding with cottage cheese and diced pineapple for a healthy, high- protein breakfast.
