Today’s recipe is simple to make, fast as can be thanks to the instant pot, and only requires a handful of ingredients to put together! You are going to love how easy it is to make a healthy and tasty meal after a busy day!

Ingredients Needed
To cook up a pot of this buffalo chicken instant pot, the list of ingredients you will need is short and simple! Nothing fancy and no words you can’t pronounce = my favorite kind of recipe! Here’s what you’ll need to round up to get started:
- Boneless Skinless Chicken Breast
- Buffalo Sauce (whole30 version if desired)
- Salt
- Pepper
How to make Instant Pot Buffalo Chicken
Assemble
Place the chicken into your instant pot and add the rest of the ingredients.
Cook
Cover the instant pot with its lid, set it to sealing and cook on manual high pressure for 10 minutes. Do an instant steam release and then check to ensure the chicken is fully cooked.
Shred
Remove the chicken from the sauce in the instant pot and shred it, then add it back to the instant pot.
DEVOUR
Serve and enjoy!

How to make it Paleo or Whole30
Making buffalo chicken in the instant pot is SO fast and easy, but did you know that you can also tweak the recipe a bit to suit your family’s dietary preferences and needs? You can use the paleo or whole30 friendly buffalo sauce of your choice and it will be delicious!
How to shred cooked chicken
First, remove the cooked chicken breasts from the instant pot, leaving the sauce in the pot. Next, you’re going to shred it- I find this easiest to do by using 2 forks to pull it apart. If you’d rather cut it into bite sized pieces with a large knife, feel free to do so.
How to use Buffalo Chicken
There are SO many ways to get creative with buffalo chicken. You can use it to make Cheesy Buffalo Chicken Potato Poppers or cook up some low carb healthy quesadillas and use buffalo chicken instead of bbq chicken. It would also be so tasty piled high on your favorite toasted bun as a sandwich or sprinkled over a pan of crispy nachos!
How to Freeze
It’s easy to cook, easy to use, and SO easy to freeze! If you’ve got leftovers of this tasty chicken or you simply made a double batch to enjoy later, you’ve got the right idea! Simply place the cooked buffalo chicken in a freezer style zip lock bag or a freezer safe, airtight container. Label the chicken with the date and store it in the freezer for up to 3 months.

- 1 Lb Boneless skinless chicken breast
- 1 Cup Buffalo sauce (whole30 version if desired)
- 1/4 tsp Salt
- Pinch of pepper
Instructions

Place the chicken into your Instant pot and add all the ingredients.

Cover, set to sealing and cook on manual high pressure for 10 mins.

Do an Instant steam release (you can check that the chicken is cooked to 165 degrees F) and then remove the chicken.
